Vinification

The grapes picked at perfect phenolic maturity are de-stemmed and crushed. Delicate pumping over leads to an optimal extraction of the polyphenolic and aromatic heritage of the grapes. The must ferments strictly at a controlled temperature.

Refinement

After the first racking, the wine ages for about a year in medium-toasted oak tonneaux; This is followed by racking into concrete tanks for a few months before being prepared for bottling.
